The Pichana Steak comes from the top of the rump on the cow, also known as the sirloin cap. This cut is very popular in Brazil; considered a delicacy. This steak has the Fat Cap left on for extra juiciness as it cooks. Most of the time this steak is bent in a horseshoe shape with a skewer.
