T-Bone Steaks are a very familiar cut and very recognizable by the "T" shaped bone found in the steak. This steak is cut from the front end of the short loin and, if you were to cut the bone out and make this into other cuts of meat, you'd end up with a small tenderloin, AKA a filet mignon and a cut from the loin better known as a KC Strip steak.
